Narutotai Junmai Ginjo Nama Genshu ($40)

What it is: A richly textured sake that’s unpasteurized and undiluted, in classic southern style.

Region: Tokushima.

Perfect pairing: Prosciutto-wrapped cantaloupe with balsamic reduction.

Okunomatsu Tokubetsu Junmai ($18)

What it is: An aromatic sake showcasing the purity that characterizes junmai.

Region: Fukushima.

Perfect pairing: Butternut-squash soup.

Midorikawa Honjozo ($38)

What it is: An excellent example of a northern-style honjozo.

Region: Niigata.

Perfect pairing: Ceviche.

Masumi Nanago Honjozo Yamahai Daiginjo ($60)

What it is: A daiginjo brewed in the yamahai style, which results in wilder, gamier sakes.

Region: Nagano.

Perfect pairing: Fritto misto.

Wataribune Junmai Ginjo ($35)

What it is: A rich, deep ginjo in the traditional style.

Region: Ibaraki.

Perfect pairing: Pulled-pork sandwich with coleslaw.
