Early Look Video Tour: We, The Pizza

We took a look around Spike Mendelsohn's new Italian joint.

We, the Pizza is finally proclaiming “We are open.” Top Chef: Chicago contestant Spike Mendelsohn’s new pizzeria—next to his Capitol Hill burger joint, Good Stuff Eatery—is turning out New York-style pies, classic subs, Italian sodas made with fresh fruit, and homemade gelato. Mendelsohn and chef Mike Colletti say We, The Pizza is their answer to the dominance of knife-and-fork Neapolitan pies in Washington. “You can’t go anywhere and pick up one slice of cheese pizza unless it’s Jumbo Slice at four in the morning,” Colletti says.

Between a truffle-laced wild-mushroom pie and Colletti’s grandmother’s meatballs, the duo can’t quite narrow down their favorite menu items. But they have a pretty good idea what the Top Chef judges would like: “Padma would order pizza with sausage and peppers,” Mendelsohn says. “Tom would probably do the porchetta sandwich [with slow-roasted pork and fennel/mustard-seed slaw], and he’d probably try a slice of cheese just to see how our dough is.” Check out the rest of the menu here, and see the new digs in our video tour.
