A Former Marcel’s Cook Opens the Black Squirrel

Offbeat brews--including one from Lithuania--are on offer at the Black Squirrel.
Sandwiched between Amsterdam Falafelshop and La Fourchette on Adams Morgan’s kamikaze-shot-fueled 18th Street is a new eatery that seeks to bring civilized food and offbeat brews to a neighborhood saturated with jumbo slices and Miller Lights. The Black Squirrel—named for the furry critters that Canada gave to the National Zoo back when Teddy Roosevelt was President—replaces T.S. Muttly’s, an Irish pub. Chef/owner Gene Sohn and his partners “got rid of all the green,” recasting the space with red walls, polished wood floors, framed movie posters, and tree-trunk tables.
The Black Squirrel has ditched the decor of its Irish pub predecessor in favor of quirky touches like tree-trunk tables.
Sohn previously worked as a line cook at chef Robert Wiedmaier’s luxe and expensive Marcel’s in DC’s West End. He brought some friends with him from that kitchen to cook at this much more laid-back operation, where the menu of American comfort fare hints at Sohn’s classical French training. Ribs are braised for 24 hours, duck spring rolls are wrapped in feuille de bric, and bacon burgers are stuffed with Brie, “so even if someone asks for it well done, it stays nice.”
The still-growing list of 50 beers (11 on tap) is the domain of co-owner Paul Uppole, who’s been bartending around DC since 1991. He’s got Belgian brews like Chimay on tap, and the bottled selection includes more-exotic finds such as Svyturys, a Lithuanian beer that’s one of Uppole’s personal favorites.
The Black Squirrel serves food until midnight, but Sohn plans to add a menu of “French tapas” priced between $5 and $12 that will be available after midnight. (The bar stays open until last call.)
So far, Sohn has seen a low-key, mostly local crowd: “People seem to come here to escape the rowdies. That was our goal.”

I’ve been to the Black Squirrel twice now and will likely make it a regular stop when in Adams Morgan. Their food is top-quality and their beer selection is perfect.

I have been three times so far and am continually impressed by the quality of the food and the beer selection. I generally drink wine, but have started taking Paul’s suggestions on beers because there were so many interesting beers on the menu. My favorite so far is the Double Chocolate Stout, which was great with the chef’s fantastic lava brownie!
I also love the Duck Spring Rolls, like the previous commenter. One late night they were out and I was really disappointed, but loved the tomato soup and mini grilled cheese sandwiches that I got instead.
Now that I have thought about their foods, I am starving!

I went the other night with some friends, and we all thought the food is fantastic. We shared the duck rolls and calamari, both of which were wonderful. For my entree I had the steak and my friends had the ribs and the chicken. We all enjoyed our meals a lot. One of the best things about the place, is that it’s really comfortable, and the staff is extra friendly. Especially if you have questions about the menu or the beer selection. They have so many beers on tap and by the bottle, we were able to try a lot of different types of beer. The table next to us was drinking a German beer in huge liter mugs. I’ll definitely try one of those next time.

I was there the other night for dinner, and the food was great, but the service not great. They only had one waiter for then entire place, which went from empty to packed in about 15 minutes. He did his best, and he was friendly, but it took 20 minutes from the time we finished our food to get the check/table cleared.
