Happy Monday, food truck followers! A few of the food trucks are still recovering from Cinco de Derby Curbside Cookoff weekend, and you may be too. Look for restorative eats like pho from Pho Junkies, BLT goat mac aboard Cap Mac, and chicken parmesan from Sub Urban Bros.
