In the recent-openings department: As of Monday, restaurateur Andy Shallal has four locations of Busboys and Poets: a new outpost opened Monday in Hyattsville. Kaz Okochi's Oh Fish! opened Wednesday with a Subway business model applied to sushi. We have more details here.

Chef Enzo Fargione, most recently of Teatro Goldoni, has an estimated opening date for his restaurant: late September, reports Nycci Nellis. That's the same month that the Atlanta-based pizzeria Mellow Mushroom estimates it'll start slinging pies in Adams Morgan, says Eater DC. We got the scoop that next year, chef Spike Mendelsohn will open two outposts of his Capitol Hill burger joint, Good Stuff Eatery, in Crystal City and Georgetown.
José Andrés's new America Eats Tavern—a temporary "pop-up" running in conjunction with the National Archives' "What's Cooking, Uncle Sam?" exhibit—has lost its head chef, reports Tom Sietsema. Richard Brandenburg is leaving AET, located in the Café Atlántico space, to be the "director of culinary strategy" for the real-estate firm Edens & Avant. Brandenburg's projects include revamping the Capital City Market in Northeast DC, which he hopes will eventually house restaurants and a culinary school. Edens & Avant is also behind Mosaic, a development in Merrifield with such tenants as Sweetgreen, Taylor Gourmet, and restaurateur Jeff Black.
Via a press release, we learned that Washington has another Top Chef contestant to cheer for: pastry chef Matthew Petersen of CityZen and Sou'Wester will compete on Bravo's second season of Top Chef Just Desserts. Peterson's resume includes stints at two Daniel Boulud restaurants in New York and one in Florida. Before that, he worked in Philadelphia. The show, which debuts on Wednesday, August 24, pits 14 chefs against one other to win $100,000.
