We just can’t get enough of local registered dietitian Carlene Thomas’s recipes. Her adorable and tasty cheesecake bites and sugared cranberry cornbread cakes have us wishing we could hire her as Well+Being’s personal chef. When she showed us how she ate for a day in this week’s Food Diaries post, we had to ask her for just one more recipe: the Pinterest-worthy cranberry ginger “mo-ho-ho-jito” drink. The simple recipe calls for six ingredients and makes for a clean holiday cocktail. Cheers!
Ingredients
2 ounces 100 percent cranberry juice
4 ounces ginger beer
Seltzer water to fill
1½ ounces rum
Fresh crushed mint
Fresh cranberries
Directions
Add juice and rum to your drinking vessel. Add mint. Pour in ginger beer and fill the remainder with seltzer. Drop in fresh cranberries.
