Yellow Tomato Soup at Indebleu

Tomato soup, Indian style.

Some dishes linger in the mind. The cold yellow-tomato soup at IndeBleu is just such a palate grabber. Made with yellow tomatoes and basil-flecked paneer (the Indian cheese) and finished with herbs and red-tomato tartare, it's tangy, creamy, and delicious. Chef Vikram Garg has a thing for yellow tomatoes, which he says have an "aroma sweeter than the red." Inspired by a Punjabi comfort dish, butter paneer, it is like the last hurrah of summer--in a bowl.
