We like gheymeh—lentils, onions, and beef steeped in a tomatoey broth—and kashk-o-bademjan, a sweet and smoky dip of eggplant, cumin, and whipped yogurt. And though tender lamb shank stands out, Cornish-game-hen and kubbideh (spiced ground meat) kebabs are delicious, too.
