Rubén García may be an alum of forward-thinking restaurants like Minibar and El Bulli, but his venture in the Square food hall is a paean to the homey Spanish cooking he grew up on. The oak-and-charcoal grill turns out beautiful crisp-skinned sea bass and tender Ibérico pork, with accents like a hazelnutty romesco and a bright mojo verde. The burnt Basque cheesecake is the dreamiest version around.
