DC Will Get a Poultry-Centric, “Beak to Toe” Restaurant

The same restaurant group who brought us the Pig are moving on to poultry. EatWell DC officially announced that they’ll open the Bird, a 75-seat “beak to toe” restaurant, near Logan Circle this summer.

Chef Michael Bonk of the Pig will design the menu, filled with a range of poultry dishes from around the world for dinner and weekend brunch. The kitchen plans to use local chickens, but also draw from the wider avian realm, sourcing duck, quail, grouse, turkey, goose, and ostrich. EatWell plans to draw from their Maryland farm for the produce, and seek out natural and “ethically treated” birds. Outdoor seating will be available on the patio and a second-floor terrace (or shall we say perch?).

The Bird isn’t the only poultry-heavy restaurant coming to Washington. Daikaya’s owners will open Bantam King in Penn Quarter this year with chicken two-ways, ramen and fried.
