In last week's chat with restaurant critic Todd Kliman, a reader asked where to find ramps and fava beans—a vegetable garden's first signs of spring. For today's chat, Kliman posted a list of restaurants (with the help of intern Kyle Jameson) where you can find early-spring ingredients, from a steak at Cedar with fiddlehead ferns to chef Haidar Karoum's simple side of grilled ramps at Proof.
