We found far and away the best presentation at Mark’s Duck House (6184 Arlington Blvd., Falls Church; 703-532-2125), where bronzed birds beckon in the window. The signature dish ($28.95 for a whole, $14.95 for a half) was glossy-skinned, the small pancakes were translucent and papery, and the hoisin wasn’t cloying.
