Great Bars 2013: Veritas Wine Bar

A profusion of wine bars and tasting rooms have popped up in
recent years—but the focus seems to have shifted more toward food. Not at
Veritas, a wine bar with ample single varietals and blends from diverse
regions—with an emphasis on Europe and the American West—and a truly
educated staff to help weed through them. Before its 2007 opening,
then-owner Adam Manson spent 3½ months curating Veritas’s list to showcase
some truly great wines from around the world, now maintained by general
manager and sommelier Jamie Smith. Insider tip: Tell the server the name
of a wine you love, then challenge him to come up with a similar flavor
profile from a different grape. If you don’t like it, he’ll replace it.
