It’s strawberry season, and we are all for it. The red berries are low in fat, sodium, and cholesterol, and rich in vitamin C, folate, and fiber—plus they’re a healthy and tasty way to satisfy one’s sweet tooth.
But while strawberries are great on their own, they’re also a versatile ingredient in everything from drinks to dinner dishes. Here are three easy recipes to try.
Strawberry-Feta Pizza
For a quick dinner, grab a pita and toss strawberries and your favorite cheese and greens on top.
Ingredients
1 closed pita or 2 mini pitas
½ cup sliced strawberries
½ cup feta cheese (or your favorite soft cheese)
½ cup arugula (or your favorite greens)
Bake pita in oven or toaster oven at 425 degrees for 8 minutes. While waiting, mix together strawberries and greens with a drizzle of olive oil and a squeeze of lemon juice. Remove pita from oven and spread cheese over crust. Top with strawberry mixture and add salt, pepper, and Parmesan cheese to taste.
