Brothers Eric and Ian Hilton have a formula: Take an average
concept such as a British pub—or wine bar (Dickson), barbecue joint
(American Ice Co.), or bistro (Marvin)—style it to the nines, arm it with
skilled bartenders, and let the crowds roll in. The tri-level Brixton is a
bar for all seasons, with one of the best (and biggest) roof decks in town
for temperate evenings and a Scottish-lodge-like second floor with a
fireplace and a cozy couch—the perfect spot in winter. Insider tip: It’s a
bar with a split personality: a packed weekend meat market (with some
quality-control issues) and a laid-back weekday neighborhood place. We far
