Rose’s Luxury chef/owner Aaron Silverman is giving Capitol Hill a good reason to rise early: the opening of Pineapple and Pearls coffee bar, which debuted today with espresso drinks, pastries, and breakfast sandwiches.

The fine dining portion of the highly-anticipated restaurant is still in the works. In the meantime guests can visit the takeout counter for coffees and espresso drinks, which can be made with a variety of nut milks (pistachio, macadamia). Sweets include lemony-thyme shortbread and pineapple sticky buns. The opening menu also boasts three savory sandwiches, including masa bread stuffed with egg hash and salsa verde, falafel with house-made pita, and chimichurri grilled chicken on olive oil brioche. Fingers crossed the lines will be shorter than Rose’s.

Pineapple and Pearls Coffee Bar. 715 Eighth St., SE. Open Tuesday through Friday, 8 am to 2 pm; Saturday 8 am to 4 pm.
