Lunch Makeover: The Tomato-Basil-Hummus Sandwich

This super-simple lunch kicks off a new Well+Being series.

Welcome to a new Well+Being series, Lunch Makeover, where we feature our favorite DIY lunch remedies for the office. Don’t worry—Lunch Break isn’t going away, but sometimes it’s good to give our wallets a break and make use of all that delicious seasonal produce ourselves.

This week we’re featuring a simple twist on your typical tomato-basil-mozzarella sandwich. Registered dietitian Carlene Thomas says this is her go-to lunch while tomatoes are still in season. Just swap the cheese for a tasty spread—Thomas recommends mixing a bit of mayo with plain Greek yogurt. “Or just use the smallest bit of real mayo, but mix it with the juice from the ripe tomatoes.” We opted for white bean basil hummus from Trader Joe’s for a touch of extra protein.

Tomato-Basil Sandwich

Nutrition per serving: 182 calories, 4.4 grams fat, 28.8 grams carbohydrates, 9.4 grams protein
Prep time: 5 minutes or less

What you’ll need:
Two slices of whole-grain bread (or your choice of bread)
Your choice of spread
2 or 3 slices of tomato
fresh basil leaves

Spread a tablespoon of your choice of spread onto the two slices of bread. Add the sliced tomatoes and basil leaves. Toast sandwich and enjoy.
