Tremolo Bar

“Bar” doesn’t quite cover it for this refined-casual dining room on Middleburg’s main drag. Sure, there are 60-plus wines by the glass (and half or full bottles) handpicked by chef/owner/master sommelier Jarad Slipp—plus a handful of classic “No fru-fru BS” cocktails, such as Prohibition-era Bees Knees, a divine gin-and-honey elixir. The menu, entirely composed of “snacks,” is the runaway hit. Many turn out to be big enough for a meal, including a perfect shrimp roll with Duke’s and Old Bay, a stew of tiny white beans with seared rounds of garlic sausage, and rigatoni with a spicy ragu. Warm crab dip and a stellar pan con tomate make generous shares. Slipp’s wine shop and pizza takeout a few doors down, Knead, is worth a stop, too.
