This glass box of a restaurant is one of those places that will have you asking, “How is this vegan?” Its suero, a Colombian dip served with a quintet of arepas, is a ringer for sour cream (credit, somehow, goes to cashews and hearts of palm). The mod-Latin, entirely plant-based menu offers a 14-course tasting menu, but we’re happier with the six-course prix fix or, at the bar, with its à la carte menu and easy-drinking cocktails.
