The Adams Morgan mainstay recently turned 40, but it feels brand-new thanks to inventive Japanese comfort dishes from chef Masako Morishita. Garlicky edamame dumplings showered in Parmesan are an instant classic, as is the egg-salad-topped shrimp kat-su burger. Sushi is still a reliable bet, but the fun is on the specials list, where you’ll find dishes like braised daikon with brûléed Brie.
