     Salt Air
     1 cup Water
      2 tablespoons salt
      ½ cup Lime juice
      1 teaspoon of Soy Lecithin

     Margarita
1 ½ oz. Jose Cuervo Traditional
     1 oz. Cointreu
2 oz . Fresh Lime Juice
     Salt Air

Salt Air Preparation:
Combine salt air ingredients into a large open container and blend using an immersion blender until a light foam forms.  Set aside.

Margarita Preparation:
Combine the margarita ingredients in a cocktail shaker with ice.  Shake well and strain into cocktail glass.  Re-whip the salt air if necessary to build up more foam.  Using a large spoon, gently pick up only the foam, no liquid, and place foam on top of the drink.
