Bethesda native Marc Glosserman looked to the famed Kreuz Market in Lockhart, Texas, to inspire the spice-rubbed, oak-smoked meat he serves at his original Manhattan location. The same brisket and ribs are sold by the pound at his 300-seater in Penn Quarter.
