Another Mason Dixie Biscuit Co. Pop-Up Starts Friday

Roofers Union is partnering up for late-night sandwiches.

Better watch out, doughnuts—there may be a new “it” pastry in town. Mason Dixie Biscuit Co. hosted its first pop-up at the Dolcezza Factory this past weekend, which drew some pretty insane lines. Now Roofers Union welcomes the upcoming brick-and-mortar business on Friday and Saturday to offer late-night biscuit sandwiches. 

The crumbly rounds are a product of pastry chef Jason Gehring, formerly of Astro Doughnuts & Fried Chicken, and biscuit-loving business partners Mo Cherry and Ayeshah Abuelhiga. The team will preview three sandwiches from their upcoming menu: a fried chicken biscuit, another piled with pulled pork, and a riff on a sloppy Joe. Roofers chef Marjorie Meek-Bradley will add to the pop-up’s offerings with Southern specials like fried green tomatoes with pimiento Whiz, and barbecue brisket hoecake tacos (we sense another hybrid baked good here: hoecos). 

The menu will be available from 11 PM to 1 AM on Friday and Saturday, or until the kitchen runs out, with items ranging from $6 to $12.
