We hear that Ethan McKee will assume the executive chef position at Circle Bistro, the lowkey American restaurant in DC's West End. Since last August, when Brendan Cox announced he was leaving to take up the reigns at DC Coast, the Circle Bistro kitchen has been run by an interim chef. McKee, who officially started yesterday, was most recently at Rock Creek at Mazza, where he oversaw the calorie-conscious menu for just over a year. For seven years before that, he worked at Equinox, where Cox used to be a sous chef.
McKee says he's waiting until after the inauguration to make any menu changes.
