Chef José Andrés (Oyamel, Café Atlantico, Zaytinya, Minibar, Jaleo) joins Wylie Dufresne, chef/owner of WD-50 in New York, to discuss the rise of Spanish vanguard cuisine and its influence on the culinary world. Vanguard cuisine, also known as molecular gastronomy, employs forward-thinking techniques and sciences in cooking. The French Wine Society’s Advanced Wine Studies series presents “Oak and Smoke.” The class will discuss the main differences between French and American oak flavorings, the smokiest varietals, and the use of barrel toasting.
