This year Jack Rose Dining Saloon‘s beverage director Rachel Sergi went all out with her creative concoction for the Corcoran Gallery’s Artini Night.
Inspired by Frederic Edwin Church’s oil painting of the Niagra Falls, Sergi uses a mix of crushed blueberries and green apple juice and tops it off with a special foam of Jack Daniel’s honey and Solgar lecinthin to mimic the falls and mist.

Ingredients
1.5 ounces Blueberry/green apple juice mix*
1.5 ounces Herradura Silver tequila
1 pulse Bittermens Elemakule Tiki Cocktail Bitters
Foam mixture*
Pour tequila into an ice-filled mixer. Add juice mix. Add a pulse of bitters. Shake well. Pour into an ice-filled wine glass. Top with foam.
Fresh juice from crushed blueberries
Green apple juice
Depending on your serving size, the ratio of green apple juice to blueberry juice is 4 to 1.
Foam mixture
2 cups Jack Daniel’s honey
1 tablespoon Solgar lecithin
1/4 cup demerara sugar
Mix all ingredients together using a blender until it creates a frothy foam.
