An Update and Opening Date for Beuchert’s Saloon

The Eastern Market eatery debuts in January.

Back in June, the Young & Hungry blog brought news that a trio including an Acqua Al 2 partner (Nathan Berger), a set designer (August Paro), and a former PS 7’s bartender (Brendan McMahon) were opening a new Eastern Market spot with the name Beuchert’s Saloon—a reference to a 19th-century watering hole (and Prohibition-era speakeasy) once housed in the same building at 623 Pennsylvania Avenue, Southeast.

At the time of the article, the three owners had not settled on a chef. Word comes today that Andrew Markert—formerly the chef de
cuisine at PS 7’s, Hook, and Tallula—has been named executive chef.
Markerts menu will have five separate sections focusing on locally
sourced vegetables; snacks (charcuterie and cheese, grilled country paté); main courses called “Whole Meals” including individually portioned dishes and shareable
plates; side dishes like corn grits with local goat cheddar; and a
dessert selection focusing on “playful retro” treats such as banana Foster Twinkies.

Berger and McMahon are in charge of the craft cocktail and soda
program, while Paro has charged himself with restoring the interior to
its former self—bringing in period-correct fixtures and finishes.

The 47-seat restaurant is set to open January 7.
