Recipe: Pimiento Cheese from Gypsy Soul

Hot sauce and piquillo peppers rev up this addictive cheddar dip.

We had a hard time resisting this Southern-style cheese spread at R.J. Cooper’s Gypsy Soul. Lucky for us, it’s ridiculously easy (and quick) to make at home. Cooper suggests using pita chips, naan crisps, or vegetables for dipping.

Serves 8

1 pound cream cheese (preferably Philadelphia brand)

4 tablespoons mayonnaise

1 pound cave-aged cheddar, grated

1 Vidalia onion, minced

½ cup piquillo peppers, minced

1 ounce hot sauce (Cooper likes Blis brand)

½ teaspoon smoked paprika

Pinch cayenne pepper

Salt and black pepper to taste

In a stand mixer fitted with the paddle attachment, soften the cream cheese. Fold in the remaining ingredients. Season to taste with salt and pepper.
