Jon Mathieson Is Now Executive Chef for the Redskins

A team spokesperson confirms the hire of the former BLT Steak chef.

As Tim Carman of the Washington Post first reported Monday, chef Jon Mathieson quietly left BLT Steak—the downtown steakhouse where he served as executive chef since spring 2012—in late September. Mathieson, an alum of 2941, Inox, and Michel, replaced Del Campo toque Victor Albisu at BLT.

An unnamed source at the steakhouse confirmed the information to Carman. Esquared Hospitality, the New York-based BLT parent group, has not yet issued a statement on Mathieson’s departure or who will replace him in the kitchen.

This morning, a spokesperson for the Redskins confirmed to Best Bites Blog that Mathieson has signed on as the team’s executive chef. The news follows reports from this summer that the Redskins would be hiring a full-time chef for its expanded kitchen at the newly renovated Redskins Park in Ashburn.

Mathieson could not be immediately reached for comment. We will share more information when we have it.

Former BLT bartender Steve Oshana also left the restaurant in September. He is now the corporate beverage manager for Todd and Ellen Gray.
