This week’s Lunch Makeover includes a sweet addition to your typical tomato-mozzarella-basil combo: peaches.
It calls for just one peach, which contains a healthy dose of both vitamins A and C. They’re especially delicious this time of year until the end of August. Just chop up your four ingredients, throw them into a container, and you’ve got a healthy and beautiful lunch.
Peach Caprese Salad

What you’ll need:
1 peach, sliced
1 small tomato, sliced
Fresh basil leaves
3 slices fresh mozzarella
2 tablespoons balsamic vinegar
1 tablespoon olive oil
Pepper to taste
Once you’ve sliced the peach, tomato, and mozzarella, toss the trio into a container with the basil leaves. Add the balsamic vinegar and olive oil when ready to eat. Sprinkle with pepper.
